Pan Roasted Corn and Tomato Salad
Enough of the justification: this is just plain good. At the end, you've got meaty smokiness from bacon; that incredible sweetness of corn; the fruity acidity of tomato; the tender, smooth fattiness of avocado, and the sharpness of chili. It's a summer winner, one that you shouldn't even try after the first frost. -- posted by Ice Cool Kitty

Old Fashioned Chicken and Dumplings (Made Easy)
When I was growing up, one of my favorite comfort foods was my maternal grandmother's chicken and dumplings. "Nana" would stew the chicken and debone it, strain the broth (seasoned with fresh rosemary from her garden), roll her own biscuit dough, then drop the flour-rolled dumplings into the broth. It seemed like a lot of work, but she always had it on the table in minutes! She usually made it when I was sick or not having a great day (my mom too). It's one of those ''little things" my mom and I recall fondly.

Cabbage Salad With Peanut Dressing (Vegan)
From Veg Times, this recipe calls for Napa cabbage (aka Chinese cabbage). Nice change from lettuce, and for those who don't care for the usual coleslaw, this one has a distinct Asian flavour with the sesame oil, ginger and soy. Lots of room to add more veggies as you wish! -- posted by magpie diner
